Family Dinner With Mexican Cuisine
Last night was our weekly family dinner night! Hosting a family dinner has been a little challenging as my husband has started a gluten-free diet and my older son is vegan. Then there’s the challenge of making something my grand-kids enjoy too! After some thought I decided that Mexican cuisine would be the perfect solution!

Flax Seed Burfi (Flaxseed Healthy Bar)
Flax Seed Burfi or you can call this health bar. Flax Seed is high in protein and good source of vegetarian omega 3. This Burfi is vegan, gluten free and tastes great.

Fruit Chaat
This is a bright, colorful and refreshing fruit chaat that can also be used as a fruit salad. My siblings and I looked forward to the fruit chaat, which was served regularly as part of our lunch. It was a delicious way of eating a great variety of fresh, seasonal fruit. This will brighten up any meal or taste great by itself, any time of the day.

Gajar Matar (Carrots With Green Peas)
Gajar Matar is a healthy and easy recipe to make. This mildly spiced, colorful dish can compliment just about any meal.

Gatte Ki Sabji (Rajasthani Cuisine)
Gatte Ki Sabji is a traditional dish from Rajasthan. These steamed gram-flour dumplings are cooked in a spicy gravy. This mouth-watering dish will complement any meal. Enjoy Gatte Ki sabji with roti or plain rice. The recipe is also vegan and gluten free.

Ginger Relish
Ginger relish is very handy to have in your refrigerator for spicing up many different dishes.

Green Beans and Peas
Green beans and peas is healthy side dish with mild spices, which nicely compliments kadhi or any dal.

Grilled Tofu Sandwich
These are absolutely delicious and flavorful sandwiches that are quick and easy to make. Tofu sandwiches are healthy and appropriate for Vegans, too. The Tofu provides a great source of protein, while the Hari Cilantro chutney brings in a unique ethnic flavor to the sandwich. These sandwiches make a great “to-go” lunch.

Grilled Veggie Healthy Bowl (Air Fryer Recipe)
“Grilled Veggie Healthy Bowl” is inspired by my daughter-in-law, who enjoys light, fresh, and healthy meals. She suggested I do this video after trying my recipe out. It’s hard to believe something this healthy makes such a delicious and filling meal! In this recipe, I grilled asparagus, broccoli, bell pepper, zucchini, and cherry tomatoes. I then toss the grilled veggies with spiced chickpeas and a homemade ginger dressing. The ginger dressing definitely adds a kick to the flavor. This bowl is also pleasing to the eyes as it’s filled with colorful vegetables and the chickpeas add some texture, in addition to protein! This dish vegan and gluten-free. This makes for a great lunch. Or you can serve this as a side dish or make a wrap using tortillas or flatbread.

Hari Chutney – Cilantro Chutney
Hari (Green) chutney is made with fresh cilantro (green coriander) and a variety of spices. This chutney is a must-have for every fridge. Tastes delicious with pakoras, samosas, chaat and many more popular Indian snacks. Like ketchup and other popular condiments, hari chutney can be used in a variety of different ways!

Homemade Artisan Bread
There is nothing as tempting as the smell of fresh bread in the morning. With just a few ingredients and some advance preparation, anyone can make fresh, crusty artisan bread at home just like they do in the professional bakeries.

Hyderabadi Bagara Baingan
Bagara Baingan is a popular Hyderabadi dish. It is made with small eggplants that are cooked in a rich masala curry. Hyderabadi baingan is the perfect dish to serve to guests with a sophisticated palette because of the mixture of nutty spices.

Jalebis can best be described as funnel cakes. Jalebis can be made thin and crispy or thick and juicy. Jalebis taste best when served hot.

Kaju burfi is probably the most favorite Indian dessert. Kaju burfi is a delicious treat for any occasion. This can also be served as a fudge or candy. This is also a great vegan treat.

Kala Chana (Black Chana)
Kala Chana is very high in protein and provides a nutritional meal. It has a low glycemic index and is a good protein option for people with Diabetes. Kala Chana is a variation of the commonly found chickpea but it is dark brown in color and smaller in size. It is also known as Bengal gram.
