Gajar Matar (Carrots With Green Peas)

Gajar Matar is a healthy and easy recipe to make. This mildly spiced, colorful dish can compliment just about any meal.

Recipe will serve 4

Gajar Matar (Carrots With Green Peas)Ingredients

  • 2 cups carrots diced in about 1/2 inch pieces
  • 1 cup potato cubed in about ½ inch pieces
  • 1 cup green peas
  • 2 tablespoons oil
  • 1 teaspoon carom seeds (ajwain)
  • 4 whole red chilies
  • 1 tablespoon coriander powder (dhania)
  • 1/2 teaspoon turmeric (haldi)
  • 1 teaspoon salt
  • 1 teaspoon lemon juice

Method

  1. Heat the oil in a saucepan, on medium heat.Add carom seeds.   The oil should NOT be very hot as the carom seeds will burn and lose their flavor.
  2. Add whole red chilies and turmeric and stir for a few seconds.
  3. Add carrots, potatoes, green peas,  coriander powder, and salt.  Mix well.
  4. Cover the pan and let it cook on medium heat for 10 minutes until the vegetables are tender. Stir occasionally. Turn off the heat when done.
  5. Add the lemon juice and stir.
  6. Serve hot.

  1. Greetings, Manjula, thank you for this recipe. I often make it as a side dish with Thanksgiving dinner. As you said, it goes with nearly everything. I think it harmonizes well with the typical turkey, dressing, cranberries, and so on. And for those who don’t eat the turkey, it provides a different, interesting dish to enjoy! I have made it many times, and everyone loves it, even people who are skeptical about Indian food. Thank you again for sharing this recipe!

  4. Thank you for your recipes!
I always wanted to try indian food but never found a nice source for recipes, think the search is over now. 🙂

This one here is the next on my list but i’m little confused about the cooking time.
Potatos need longer to cook than carotts, witch will take longer to cook than peas. But you add all at the same time.
Usualy Potatos are served as a side dish in Germany, just cooked in saltwater for at least 15 minutes, up to 20 minutes. So i realy don’t see how they can be ready after 10 minutes.
Perhaps american Potatos differ from the ones here in Germany?

    regards,
    Stefan

  5. Manjula,

What a lifesaver you arer! My husband is Punjabi and I am full blooded American. I really wanted to learn Indian cooking as it makes him so happy. But when his friends try to teach me it was a pinch of this a pinch of that. And I don’t know the correct taste it should be. Your recipes are very tasty and easy to follow. Best of all they are heart healthy (no ghee!). Now our social circle of Indian friends love to come to our house when I cook your recipes. Thank you! I never thought I could do it. Diane

  6. A friend made this for me tonight, using sweet potato and adding tempeh and kale. It was beautiful and so flavorful! Thanks for your site and the videos, I’m so excited to try all your vegan recipes! Namaste 🙂

  7. I found you on youtube looking for a roti recipe. I could just eat roti everyday. I have been following and going through your website & recipes ever since. There are so many I want to try. I am from the Carribean where there is a strong Indian influence in our food. My aunt would make all kind of foods with curry. But many people use the pre-mixed kind. Your video recipes are easy to follow.
    Thank You Manjula.
    Namaste

  9. This recipe is very good! I have made it three times and it’s now one of my favorites.

I notice that the written version of the recipe doesn’t mention that you need to mix water in with the spices to keep them from burning – if any readers were going to work from that, make sure to add some like in the video.

Thank you very much for this recipe!

  11. I made this tonight and it was awesome!

Gajar matar is one of my favourite foods, but because we recently cut onion and garlic out of our diet I was at a loss about how to make this. Thank you so much for posting this!

I have a gluten free home, and I haven’t been able to find carom seeds that are processed in a gluten free environmen, so I substituted oregano for the carom and it was a great replacement.

Manjula, my husband thinks I am queen of the kitchen because of your recipes!
