Mangoes are my all-time favorite fruit. In fact, whenever we go grocery shopping, mangoes are almost always purchased! I always have a variety of mangoes on hand. There are many different types of mangoes and everyone has their favorite type. My childhood was filled with fond memories eating fresh mangoes. I think I have so many memories attached to eating mangoes that I enjoy them even more.

Due to the current state of the world, we have all been trapped at home and not by choice. In order to stay sane, everyone has been trying to find their own way to remain productive and enjoy their time while staying at home. Most people I know have been spending a lot of their free time in the kitchen with family, cooking together. I have gotten many requests for healthy and simple snacks that can be prepared with kids.

When the boys were young, I made sure to have tasty and healthy snacks readily available. They would often bring their friends, who loved coming to our house after school. Our house was the place to be fed well with homecooked fresh food! I would keep their snacks quick and easy to prepare. They also love helping me prepare snacks.

My Journey with Alex
Many of you have asked me about the man behind-the-scenes of Manjula’s Kitchen…Well as many of you know, that person is my husband Sikander aka Alex. Alex is responsible for me being in the spotlight of Manjula’s Kitchen, while he prefers to stay in the background. The simple truth is my YouTube channel exists only because of his hard work and dedication. He introduced me to this new concept for me at the time, YouTube. Alex takes the lead on all of the hard work these videos take, from the editing to ensuring the recipes meet his quality control (i.e. taste testing!) Every recipe has to meet Alex’s high standards for being posted. Alex feels so proud when reading the comments on my posts and always tells me that he is my biggest fan. With a huge smile on his face, he will tell me your fans don’t know that the biggest fan of yours is standing right next to you!
How it all began – The story behind Manjula’s Kitchen
My journey to start my YouTube channel began in December 2006. I still find it hard to believe I am still running a successful channel that I enjoy with all my heart. We will continue to bring you great content as long as we can. When I say “we” I mean my husband Alex, who has been instrumental in this journey as my videographer, and I. This foray into the world of YouTube and social media was something I never imagined I would be involved in, let alone plan. This was especially true since I had no idea what YouTube even was at that time. Not knowing just how big YouTube was or what kind of platform it was probably an advantage for me because I did not feel scared or threatened by it.

Laucki is also known as Bottle gourd. This is a healthy and wholesome lentil and vegetable main dish. I like making Lauki as it is mild in taste and easy to digest. I usually will serve this with plain rice or rotis.

Kacche Aam Ki Dal is a very simple dal recipe but delicious. This is Toor dal with raw mango. The tanginess of raw mangoes gives a delicious flavor to dal. Today I am using Instant Pot, that’s what I have been using instead pressure cooker.

Makhana Matar Curry is a delicious gravy-based dish. This can be a tasty side dish for formal dinner or even a quiet dinner with a few friends. Makhana and matar is made with a spicy tomato and cashew gravy. I like to serve with fresh hot puris or white rice.

Achari Mathri (Masala Mathri)
Achari Mathries, is a traditional staple snack in North India. They are usually served with spicy pickles, but in this recipe I have added mango pickle spices in the dough instead to add a tangy flavor to the mathri itself. With my family, mathries are a must have while travelling, and now with Achari Mathri, we no longer need the pickle, so it becomes one less thing to carry.
