Masala Bell Pepper Curry

Masala Bell Pepper Curry, which is a Hyderabadi-style dish. Hyderabad dishes are very spicy and aromatic. For me, bell pepper curry represents these dishes well. I wanted to do a recipe for a side dish for a more formal get together. I happened to have some extra bell peppers in my fridge, so I decided to experiment with those.


Celebrating Navratri!

Hello all! I hope everyone is doing well and getting used to our new normal. I know this year our holiday celebrations don’t feel the same. We are used to celebrating with large numbers of people and celebrating the festival season. I know it may not be ideal, but we can still make the most of the season by getting together in our backyards with small groups.

My ultimate favorite cuisine is of course Indian. But I must say that Mexican and Italian cuisines are close seconds! Overall, I enjoy trying new cuisines with a variety of flavors. After coming to the United States, Mexican cuisine was the first new cuisine I tried. As you already know, I have a story behind every dish.

Ras Malai Cake

Ras Malai Cake is a twist on a very popular Bengali dessert “Ras Malai”. Ras Malai is made with homemade cheese known as “paneer” or “chana”. It consists of soft paneer balls immersed in chilled creamy milk. Ras Malai has been always my favorite dessert for as long as I can remember. Back when I came to the U.S. many years ago, Indian cooking was a challenge as there were very few Indian ingredients available. Indian groceries weren’t as plentiful back then. To top that off, I was also a new cook. I remember my friends and I would always experiment with different recipes for Indian food using whatever ingredients we could find. We knew we had to make do with what we had by being creative and learning to cook using the ingredients were available. One thing we discovered is using ricotta cheese as a substitute for paneer as it was the closest in consistency to paneer. We started using ricotta cheese to make many milk-based Indian desserts. It was then that I learned how to make Ras Malai. While it certainly was not the same as the “real thing”, it was super simple to make and very tasty! Most importantly, I got to enjoy a little taste of home with my favorite Indian dessert! I have done one more recipe using Ricotta cheese Microwave Milk Cake. Enjoy!

My Thoughts for Air Fryer

After giving it much thought, I finally decided to get an air fryer. I checked out many of them and eventually decided to get the Air Fryer Convection Toaster Oven: it includes a toaster, oven, and air fryer all in one. Another reason I decided to buy this one is to save kitchen countertop space. I replaced the toaster oven with this air fryer. So far, I am enjoying it. As a toaster oven, it does a better job than any toaster or toaster oven I have used. I am very happy with the oven feature: it is big enough to bake a cake, small batches of cookies, and a medium size pizza. I don’t do much baking, but I have started baking more because the air fryer is easy to use and needs less time to bake it preheats in 2-3 minutes easily. It is also easy to clean.

Red Lentil Dal (Instant Pot Recipe)

Red Lentil Dal is a washed and split Masoor Dal. It is a rich, healthy lentil packed with protein and serves as a great side dish for a meal. You can also serve this as a comforting lentil soup. This is an easy dish to make.

Grilled Veggie Healthy Bowl (Air Fryer Recipe)

“Grilled Veggie Healthy Bowl” is inspired by my daughter-in-law, who enjoys light, fresh, and healthy meals. She suggested I do this video after trying my recipe out. It’s hard to believe something this healthy makes such a delicious and filling meal! In this recipe, I grilled asparagus, broccoli, bell pepper, zucchini, and cherry tomatoes. I then toss the grilled veggies with spiced chickpeas and a homemade ginger dressing. The ginger dressing definitely adds a kick to the flavor. This bowl is also pleasing to the eyes as it’s filled with colorful vegetables and the chickpeas add some texture, in addition to protein! This dish vegan and gluten-free. This makes for a great lunch. Or you can serve this as a side dish or make a wrap using tortillas or flatbread.

Frozen Chocolate Frappuccino

School is back in session and summer is pretty much over, but it’s still hot enough to enjoy “Frozen Chocolate Frappuccino”. It has been a huge hit with my grandkids this summer. Of course, they enjoy traditional hot chocolate as well. One day my granddaughter asked me if I could make a delicious cold version of a hot chocolate and call it “Frozen Chocolate Frappuccino”! It was a really hot day and we decided to experiment with different versions of cold frothy frozen chocolate. We came up with the perfect recipe together. She was so excited about this recipe that she wants to create more recipes!

Summer Salads

During the summer, a lot of us feel like eating simple, light and refreshing food. Salads are perfect and make for great lunches! Why not try a bowl of salad to satisfy those fresh and healthy cravings? Salads are super simple to assemble. You can use whatever you have on hand paired with your favorite dressing. Two Minute Fruit and Cracker Dessert

One evening while playing cards with my husband, Alex, and my son’s mother-in-law, Alex suddenly asked for something sweet. I didn’t have any dessert prepared and all we had in the house was ice cream and some chocolate. Alex has always been super innovative with his food combinations, and this recipe is just that, a product of desperation. At first, my kids and grand-kids made faces when they heard what it was made of, but with a little bit of tweaking, it has become a simple dessert that our entire family has been preparing during this quarantine.

Samosas are probably the most popular Indian snack, and street food. Samosas when paired with cilantro chutney are simply out of this world. I think they are universally loved and hard to resist.
