Whole Wheat Almond Eggless Cookies
These whole wheat cookies are light and crispy. They are great with tea or coffee. This is an egg-less cookie recipe.
Ingredients
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/4 cup sliced almonds
- 1/2 teaspoon green cardamom seed coarsely powder (ilaichi)
- 1/2 cup unsalted butter (8 tablespoons or 4oz)
- About 2 tablespoons of milk or as needed
Instructions
Method
- Pre heat the oven to 360 degree F.
- In a bowl, mix the flour, sugar, salt, sliced almonds and cardamom powder well.
- Next add soft butter and milk to the flour mixture to make dough. Dough should be very soft.
- Divide the dough into about 24 equal parts and make them into balls.
- Press each ball between your palms lightly; every piece should be about 1/2” in thickness.
- Place the dough balls on an ungreased cookie sheet about inch a part.
- Bake the cookies for about 18 minutes or until cookies are lightly gold brown.
- After they become lightly golden brown remove the cookie sheet from the oven. Let the cookies cool down for two to three minutes before taking them off the cookie sheet.

The cookies came out AWESOME! I’m not a cookie lover but I ended up loving these so much that I ate 3 while they were still warm 😀
And making a new batch again today for family and friends.
I made below variations:
Replaced almonds and cardamom with Choco chips
Replaced butter with oil
Reduced sugar qty to 1/3rd cup

I made the cookies, they came out very well. But i felt the sugar content is too high..next time i’ll add 1/4th cup sugar in 1 cup WW flour.
I made slight change. Replaced 2tbsp whole wheat flour with 2 tbsp semolina and kept the dough in fridge for 1/2 hour. The cookies came out to be very crispy. Thankyou Manjula ji for the recipe..:)

i tried these cookies today and they came out fantastic!!! thanks so much for an easy delicious recipe without eggs or baking powder/soda. i do not have a cookie sheet so i lined my cake pan with some aluminum foil and baked them. and they came out perfect, although i had to bake in three batches. but the good thing is that the house was filled with the aroma of butter and elaichi for long 🙂 an excellent option for snacks with tea, especially on a rainy day 🙂

You always have good advice too – although my comment now doesn’t necessarily have to do with the burning issues she is describing another important thing to think of when baking cookies is to not overbake them – although, if you do overbake them, then yes, they will burn. It’s more for people who might not be so familiar with baking.
But also, it’s important not to overbake cookies because once you take them out of a hot oven, the pan is still hot and they will continue to bake slightly once they are taken out. it’s important to let them sit on the sheet for a short time and then put them on a rack to finish cooling – either that or follow the recipe directions for once they are out of the oven. Sometimes what happens is people will take cookies out of the oven, see that it isn’t “set” and thinking that they aren’t done, put them back in the oven until they are overcooked. It’s a very common mistake when new to baking.
Also, another good tip when baking cookies is to make sure and use a cool cookie sheet. Don’t take cookies out of the oven, remove them from the pan and immediately put new dough on the still warm sheet. Let the pan cool down and then put the dough on. This helps the cookie not to expand and “melt” and winds up with a denser cookie as opposed to a very thin cookie.
I made the cookie as per recipe but in less then 10 mins it started burning from bottom and its not baked from top…can u tell me what i shuld do
Supriya, probably the problem is your baking sheet is too thin. For cookies to bake properly, you need a good quality, heavy weight baking sheet. The fact that they were burning on the bottom before the rest of the cookie, sounds like the baking sheet (aka cookie sheet) is the problem.
Another possible cause is your oven is too hot. Although you set the heat at 350 degrees, ovens can vary 25 to 50 degrees different from each other.
If the cookie sheet isn’t the problem, try baking them at 325 instead and see if that fixes the problem.

I think the cookies are not expanding b’coz it doesn’t have baking soda in it, I added a pinch of baking soda & instead of almonds I used chocolate chips, the cookies were wonderful crunchy & tasty! Thanks to Manjula aunty!
i tried these cookies myself and they did expand…as it is also mention in one of the previous reply i would like to mention again…it is better to keep the butter out of the fridge well in advance so it becomes soft rather than melting it 🙂

I do a lot of baking and I do not think that trying to grind “whole wheat” at home using a kitchen blender will make a flour even close to suitable enough for making cookies with. A blender would not have the grinding capacity for taking a whole grain and grinding it fine enough into “flour” I think it would wind up being a waste of time, energy and resources to even try. I am not trying to be critical but I would hate to see you go through a lot of work and effort to have it not come out ok.
Take the wheat to a bakery where they are more likely to have the industrial quality grinders.
If you have wheat at home without a grinder, then what do you do with the wheat? Just curious.

i tried this cookie this evening n during the process of baking i was very excitedly waiting for my cookies to bake but then it didnt cook in 18 minutes. so i kept still 2 minutes ,but it didnt stil cook ….then i thought may be it might become crispy when i let it cool outside…..but then wen it cooled it was very soft from inside so i thought of keeping back again …..again i kept for 10 minutes but still it did not turn golden brown instead it was whitish a sort of creamish……i used cooker range with medium heat in the middle rack( i dont have temperarture reading in my cooking range instead i have timer)……can u say wer i went wrong plz manjula i want to try this again and see bcoz i likeeeeee cookies…..tnk u for ur time
Archana, since you don’t have a temperature reading in your oven baking anything will be a problem. Go to a store that sells cooking supplies and buy an oven thermometer! You place on the same rack that you will be baking on and you can monitor the temperature of your oven. If you have a glass window in your oven it’s even easier because you can see the temperature without opening the door.
Once the temperature is where you want it, avoid opening the oven door as this will release heat and drop the temperature briefly.
From what you have described, the oven was not hot enough.

Cardamom is used a lot in Indian cooking, particularly desserts. Sure, you can substitute it but the flavor will be different.

Thank you very very much for this recipe. I love atta biscuits. This is perfect. Its a big big hit in my family. Everyone seems to love it so much that I end up making jars full each week for distribution ONLY.. I am very happy that my family is loving and send me text messages asking if I could bake some. I have made these biscuits atleast 12 times in the last one month. However, there is a request from my family members asking me to make the biscuits a bit softer ( if possible).. I tried this receipe with slight variations:
Added 4 cloves(crushed).The taste was great and the aroma of clove acted as an air freshner.
Used a combination of half butter and half oil (sunflower) in the dough.Cookies were more crisp after cooling.

Vilekha, recheck the recipe for the temperature. You cooked them at over 100 degrees LESS than what you should have. That’s why after 25 minutes, nothing happened. Your oven was too cool.
Make sure too that you are using the Fahrenheit measurement. It’s 360 degrees F, not C.
i want to know the cup measurment in terms of grams

Hey amy,Low down your oven to 320F as Jaya said.I made nankhatai once with manjula’s recepie but they came out exactly how ur describing they were ery hard to chew though.So one of my friend suggested to replace butter with ghee.Here also I think if u’ll use ghee of same amount instead of butter ur dish will be awesome.

I think i was making the cookies for the first time…and dint understand the colour darkness of the cookie,may be waiting for the cookie to get darker i let it cook for a lill longer…i even got the burnt smell quiker but i ignored and it got burnt from bottom,but when i removed n cooled it down it was just so wonderful…only keepin it for longer and waiting for the color to change spoilt my cookie…i threw all of them..and i m making with butter again 2day…will reply u once again its cooked perfectly…..:)

Hello Aunty, Tried this recipe yesterday and it was yum. And Thanks to jaya for baking tips, it was helpful in determining the right time to remove from oven.
Sonal, cookies that are burnt on the edges but uncooked in the center could be from too high of oven heat (each oven registers temp a little differently) and/or the cookie sheet is too thin and therefore gets too hot.
Try reducing your oven temp to 325 degrees (IMO 360 is too high). Also check your cookie sheet. It should have a nice heaviness too it. Hope this helps. 🙂

I tried the recipe with 1/3 cup splenda (instead of sugar). The cookies turned out pretty good. It tasted really good but was a little sweet so maybe next time I will try a little less splenda. However, the cookies were a little uncooked in the center but almost burnt on the sides and bottom; do you have any suggestions for that? I have never tried with splenda, try it and let us know, usually I find splenda little more sweet then sugar, instead using 1/2 cup sugar try with 1/3 cup splenda and use little more cardamom because that hides the smell and after taste effect. Good luck!

today i tried your cookies recipe but they came out very hard. i don’t know what went wrong. maybe i kept it a little longer like 4 to 5 minutes more than your timming because i want to make it alittle brownish in colour. i used swad whole wheat flour. please tell me what was wrong in my method.
Neena, you overcooked the cookies. Remove them from the oven just when the edges start to darken slightly. They will firm up as they cool once removed from the oven. If they have browned on top, they’re already overbaked and will be hard.

I normally get whole wheat for rotis from the local health store. This has a higher fiber content compared to the Indian atta. Will this work? They also have something called whole wheat pastry flour -do you think this would be better?

I am staying in UK and hence the butter doesnt become soft even if i keep it outside. Can i melt the butter and then add it to the wheat flour ? Or can you please suggest me some other way to do it ?
Priya, talk to people who work in the bakery of some local stores and ask for their advice. Melting the butter will make a mess. There must be a brand of butter that will soften at room temperature after a few hours because they do baking in UK and would need that kind of butter. Good luck.
