Vegetable Pasta

Fresh vegetables and whole grain pasta with savory tomato sauce makes a very colorful and delicious pasta dish. This is a simple pasta dinner. Serve with a side of salad and bread.

Ingredients
  

Pasta

  • 2 cups whole grain penne pasta
  • 1 tbsp olive oil
  • 1 tsp salt

for Vegetables:

  • 2 medium Carrots sliced
  • 1/2 cup green beans chopped
  • 1 medium bell pepper chopped
  • 1 cup sliced mushrooms
  • 1 medium sliced zucchini
  • 1/2 cup cut cauliflower in small piecess
  • 2 tbsp olive oil
  • 1 tsp salt

For Marinara Sauce

  • 6 medium diced tomatoes
  • 1 15oz can diced tomatoes
  • 2 tbsp olive oil
  • 1 tbsp chopped basil
  • 1 tsp Italian herb
  • 1 tsp red chili flakes
  • 1 tsp salt
  • 1 tbsp corn starch
  • 1 tsp sugar

For Preparing Pasta:

  • 2 tbsp olive oil
  • 1 tbsp chopped basil
  • 1 tsp chili flakes

Instructions
 

Cooking Pasta

  • In a large pot boil the water with salt and oil. After water comes to the boil add the pasta.
  • Cook the pasta until it is just tender, not too soft. Drain the water and set pasta aside.

making Vegetables:

  • Heat the oil in a frying pan over medium high heat.
  • Add vegetables (carrot, green beans, bell pepper, mushrooms, and zucchini) to skillet and sauté until they are nearly tender.

Marinara Sauce

  • Mix the cornstarch in ¼ cup of water and keep aside.
  • Heat the olive oil in a saucepan and add the basil, Italian herbs, and chili flakes stir and add tomatoes.
  • Let the tomatoes cook until they become pasty.
  • Next add cornstarch, salt and sugar to the tomato sauce, cornstarch will give thickness to the sauce.
  • Next add the sauté vegetables to the sauce and cook for few minutes on medium heat until sauce come to the desirable thickness.

Prepare The Pasta

  • Heat the oil in a saucepan and add basil and chili flakes stir for few seconds.
  • Next add the drained pasta and sauté for a minute until pasta is well coated with oil.
  • Pour the vegetable sauce over the pasta, serve hot with slice of French bread and salad.

Notes

Variations:
For this recipe you need about 5 cups of vegetable, replace the vegetables to your choice.
Serving suggestion:
Serve pasta with slice of toasted bread and green salad.
Additional Notes:
I like to serve pasta with slice toasted and spiced French bread. Before toasting the bread spread the olive oil and sprinkle basil, chili flakes and salt.

    Although I have been watching and cooking your recipes for more than 3 years , I am writing to you for the first time. All your recipes are great. I have a couple of questions regarding this recipe. Is there any particular reason for using fresh tomatoes and canned tomatoes both. secondly , I have read somewhere that basil leaves should not be cooked and always should be added at the end of cooking. your views ?

      1. Thank you for the response. In India the trend of using canned items is not prevalent. If I use complete freshly chopped tomatoes , in what way the texture will be different ?

      I mean, you’re using canned tomatoes.. Could you please tell me how to prepare those.. Is that a kind of tomato? Or Do we have to prepare a normal tomato to become canned..?

      1. Jayashree, tomatoes that come in cans are what Manjula is talking about. In the comment below yours, she did say that we can use all fresh tomatoes instead of using 6 fresh tomatoes and some canned tomatoes. 15 ounce (written as oz) equals slightly less than 500 grams so use accordingly.

    I am not indian. I am from a country in North Africa and live in the Golf. We do eat a lot of vegetables at home. We are not vegetarian but we eat meat from time to time. We are flexitarian if you want. Since I have discovered your recipes, I am eating less meat.
    Thank you so much for your wonderfull recipes. They are tasty with a lot of flavors and most of the ingredients are fresh. It is a real food. So far, I have tried potatos, eggplants and I am going to try this pasta which I am sure , it will be wonderfull and my family loved all what I cooked.

    When she says mixed italian herbs Manjula means “italian seasoning” It is a blend of several different italian herbs and can be found in the spices/salt section of any American grocery store. On the bottle it will specifically be called “Italian Seasoning”.
    Hope that this clarifies things even more.

  24. Sounds like a very good pasta sauce with all the great veggie’s and the added touch of chili pepper!! I like to serve pasta and sauce with french bread and salad, too. I will try this pasta recipe soon, very interesting variations, as I have never made this type of sauce without onions and garlic!
