Tomato Chutney

Ingredients
  

  • 6 medium tomatoes sliced
  • 1 tbsp ginger shredded
  • 4 green chilli sliced long ways
  • Pinch of asafetida hing
  • 1 tsp cumin seed
  • 1 tsp black mustard seed
  • 2 bay leaves
  • 1/2 tsp paprika
  • 1/2 tsp turmeric
  • 1 tsp salt
  • 1 tsp cornstarch
  • 2-3 tbsp sugar
  • 2 tbsp chopped cilantro
  • 2 tbsp oil

Instructions
 

  • Heat the oil in a saucepan.Test the heat by adding one cumin seed to the oil; if it cracks right away it is ready.
  • Add the asafetida, black mustard seed and cumin seed. After seeds are cracked add bay leaves, paprika, and turmeric.
  • Stir for a second and add sliced tomatoes and green chili.
  • Cover the pan after mixture comes to boil and let it cook for 6 to 7 minutes on low medium heat; tomatoes should be soft but still be in slices.
  • Mix the cornstarch with 2 teaspoons of water and add to the tomatoes (corn starch is added to give thickness to gravy but this is optional).
  • Let chutney cook for another minute. Add sugar and cilantro, close the heat and cover for few minutes.
  • Adjust the salt, sugar and pepper to your taste.

Notes

Tip
Add the sugar slowly as needed, depending on sourness of tomatoes.

    i cant thank you enough for your recipes. They are scrumptious and mouth watering. The best part about watching your recipes is they are very EASY… i have so far tried yellow rice, pani puri and today i am going to try dhokla, tomatoes chutney (my husbands favorite). The funny part is that all the ingredients that you use are mandatory available at every Indian household so really we are not going out of the way to buy ingredients for your recipe.   11. This tomato chutney recipe is really delicious!

    I changed it a bit – I used cherry tomatoes since my garden was overflowing with them, and used dehydrated red chillies instead of green ones since I was out. I also used just a couple of spoons of sugar since I already had some sweet tomato chutney in the fridge, and reduced the chutney a bit more since the cherry tomatoes were so watery.

    Thank you also for setting aside your recipes which are vegan. It is much appreciated!

    small doubt about the tamarind chutney, can we use the besan(gram flour) as substitue for the cornstarch

    I admit that I always make changes to my taste — I added chilli powder for more heat, and some vinegar for more tang.
