Chaat Bites
Appetizers are typically finger foods that are easy to pick up and eat while waiting for the main course. So I decided to come up with an appetizer that has all the flavors of a traditional chaat and at the same time has the convenience of being able to be made ahead of time and is also a finger food. After some thinking, I came up with these yummy Chaat Bites – a crowd pleaser for sure!

Dahi Vada
Dahi Vadas are lentil dumplings topped with a spicy savory yogurt and tamarind chutney. These are great as a side dish for a formal dinner or served as a chaat. Dahi vadad are made using wash urad dal or moong dal or with a combination of both dals using different proportions of dal.

Date And Raisin Chutney (Khajoor and Kishmish Chutney)
Date and Raisin chutney! This exotic sweet and sour chutney is mildly spiced, this will compliment any meal. This is an easy and quick recipe to make.

Eggplant and Mushroom Wrap with Roasted Red Pepper and Sun Dried Tomato Chutney
I was inspired by the ingredient: Bell Pepper and Eggplant. Red Bell Peppers are so delicious and sweet and roasting them brings out even more flavor and sweetness. Adding Sun Dried Tomatoes adds even more intense flavor. I’m trying to get my husband to stop eating meat, so I have to cook things with a lot of flavor and meaty textures. This chutney has very bold and robust flavor, the eggplant and mushrooms provide the meaty consistency, while the crumbled paneer adds protein.

Eggplant Roti Wrap
I am fond of Mediterranean food, so I decided to make my own version of wrap inspired by Mediterranean flavors. I used big sized roti/chapati for the wrap, eggplant pakoras/fritters along with home-made hummus and mint chutney.

Ginger Relish
Ginger relish is very handy to have in your refrigerator for spicing up many different dishes.

Grilled Eggplant Salsa Wrap
I bought a new small Indoor Electric grill (George Foreman grill) this summer and have tried several grilling recipes – the most hit was the Pineapple grilled with Honey sauce – which was actually my own accidental invention. So I have used it for the eggplant-tomato-green peppers filling. The dressing is the sauce filtered out from the grill machine spread over the tortilla before putting the filling! The wrap is filled with fresh romaine lettuce and pepper jack cheese! Hope you will like it.

Hari Chutney – Cilantro Chutney
Hari (Green) chutney is made with fresh cilantro (green coriander) and a variety of spices. This chutney is a must-have for every fridge. Tastes delicious with pakoras, samosas, chaat and many more popular Indian snacks. Like ketchup and other popular condiments, hari chutney can be used in a variety of different ways!

Kathi Roll
Me and my husband love to try different kinds of food and I enjoy trying out new recipes. Manjula aunty’s recipes are my favourite. I love the Malai Kofta recipe the most and I recommend all my friends to try her recipes. It comes out really well and tastes amazing. She never uses onion but I add them where ever I feel like as my husband loves onions. One day I registered myself for the free newsletter and got this email to participate in the contest. I explored the rules and noticed that I had to make a cold or hot wrap using roti or tortilla. I thought of this recipe as we have kathi roll in restaurants all the time and it tastes yummy. I tried it using my own style of ingredients and veggies along with Indian chutney. It came out really well and my family enjoyed it very much. I hope everyone else like it too. Mango Powder (amchoor)
Mango powder is made from raw green mangoes that are cut, sun-dried, and pounded into powder. Mango powder is used much like lemon. But it gives food a tangy, sour taste without adding moisture. Its tart flavor is used as a souring agent in soups, dals, vegetable dishes and chutneys.

Mattar Ke Kachori (Spicy Puff Pastry)
Mattar Kachori is delicious, fried puff pastry filled with spicy green peas. Mouth watering snack also can be served as part of main meal.

Methi Chutney (Fenugreek Chutney)
Methi Chutney is a popular North Indian condiment. Methi Chutney is packed with flavors, sourness from mango, sweetness from raisins; some bitterness from fenugreek, mixed with spices it has a very unique taste. Traditionally this is served with Kachories (fried puffed bread with lentils) and Puri (fried puffed bread).

Rhubarb Chutney (Relish, Pickle)
Rhubarb Chutney; you may call this relish or pickle. This Sweet and sour chutney with blend of spices taste grate and very addicting. This is a great complement to any meal.

Samosa
Samosa is probably the most popular Indian snack. Fried puffed pastry filled with spicy potatoes and green peas. No one can resist samosas, a mouthwatering snack. Samosas can be served any time and for any occasion. This recipe is for traditional north Indian Samosa.

Spinach and Broccoli Kofta
In this Spinach and Broccoli Kofta, I have used Broccoli and Spinach as a variation which makes it more healthy especially for kids. As my kids do not eat broccoli and spinach on their own I often try to mix and match different vegetables to make it more tempting for them. The crunchiness of peanuts gives it a unique taste.
