Strawberry Basil & Herb Lassi is my take on the traditional lassi drink. The fruit and herbs give it a unique flavor. The chili powder adds a little spice.
Ingredients:
- 1/2 cup thick plain cold yogurt ( ex: Greek Yoghurt )
- 1 cup unsweetened cold coconut milk
- 1 cup sliced fresh strawberries
- 4 large fresh basil leaves
- 2 large spearmint or apple mint leaves
- 1 small ( 2 inch long ) sprig of rosemary ( remove leaves from stem )
- dash of salt
- dash of chipotle chili powder
- 3 tsp. sugar or to taste
Directions:
- In a blender add liquids, berries, herbs and salt, sugar and chipotle powder
- Blend all smooth
- Chill well
- Stir before serving
- Garnish glass with herb of choice if desired
- Yield: 1 tall drink or 2 smaller ones
