Creamy Spinach Pasta

This is a delicious pasta dish with fresh spinach and rich white sauce. It is my version of fettuccini alfredo. Creamy spinach pasta looks and tastes great.

Ingredients
  

For Pasta

  • 6 oz penne pasta approx. 2 cups uncooked
  • 1 tbsp oil
  • 1 tsp salt

For Sauce

  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour plain flour, maida
  • 1 tsp dry basil
  • 1 tsp Italian herb mix
  • 1/8 tsp black pepper
  • 1/2 tsp red chili flakes adjust to taste
  • 1 cup heavy cream
  • 1 cup milk
  • 1/4 cup mozzarella cheese
  • 1/2 tsp salt
  • 6 oz chopped spinach, just the leaves, about 2 cups

Instructions
 

  • Bring a large pot of water to boil, add salt and oil. After water boils add the pasta.Cook the pasta until it is tender this will take about 10 minutes. Drain the water and set pasta aside.
  • Heat the oil over medium heat and add all-purpose flour, then stir for a minute. Add basil, Italian herb mix, black pepper, and chili flakes, and stir for another minute.
  • While stirring slowly add cream making sure there are no lumps. After it comes to a boil, add milk then bring it to a boil again.
  • Add spinach, mix it well and let it cook for 2-3 minutes stirring continuously, then turn off the heat. Add Mozzarella cheese and stir.
  • Pour the sauce over pasta and toss.

Notes

Serve pasta with crusty bread, Vegetable Soup, and Spinach Couscous Salad

  1. I am Italian and we don’t know fettuccine Alfredo, that’s Italian American, but this recipe looks good. Spinach and cream is a natural combination. If you can find it try stracchino cheese instead of mozzarella – it’s a perfect match (it’s fatter than mozzarella, so maybe you could reduce the cream).

    1. I should clarify – a pasta similar to “fettuccine Alfredo” is fetteccine al burro, which is just fettuccine with burro, parmesan and little else, a dish that you will never find in a restaurant. The American recipe takes its roots from similar but more elaborate pasta dish made by a Roman innkeeper, Alfredo, which then got popular in the USA with some changes. But if you go to Italy and ask of fettuccine alfredo, nobody knows what you are talking about.

      Anyway I will try this dish, but I will use stracchino! You can also put stracchino in pizza, it’s fantastic especially with pesto.

    i just tried the creamy spinach pasta recipe. It has come out really well even though I replaced cream with boiled milk. As today was just another boring day.. I needed something simple n different for dinner.. ur recipe has simply n mind blowingly made our night. Myself n hubby liked it a lot..

  3. The sauce was excellent, thanks for the recipe. But it was not creamy( I did not use heavy cream and used cheddar cheese instead of mozzarella ) is this the reason ??

  5. Hi mam, I have done …its very nice…without heavy cream i prepared….taste is similar to the pasta which prepared in olive garden….I had this type of pasta 2 years back in US ……currently im in india. i prepared the same…I am so lucky because i got your website ……

    is heavy cream needed for this pasta… shall i prepare the pasta without heavy cream. what is the purpose of heavy cream in this..Please let me whether i have to use boiled milk or non boiled milk….

  7. This is a wonderful Italian-inspired dish, in which I added a few artichokes and sun-dried tomatoes, as well as a few diced water chestnuts for a bit of crunch.

    I like this recipe served with a crusty artisan bread and my olive oil dipping sauce, which contains: EVOO; balsamic vinegar; shredded Romano or Parmesan; fresh garlic and basil; and a few red pepper flakes.

    Thank you for sharing this awesome recipe. I found the best cream at my local Hispanic market in the deli. It’s called “cream favorita.”

  11. I think instead of mozzarella cheese I would use parmesan cheese a’s it will make the sauce not stringy. And to make a white sauce for a cheese sauce I would use a roux – which is melt butter (not ghee as that will impart a ghee flavor and then add the flour.
