Strawberry – Orange Popsicle

Summer is the best time for frozen treats and there is nothing better than ice cold Popsicle. These Popsicles are made with fresh fruits. This is a kid’s friendly recipe. This recipe is for two different fruit flavored Popsicles, orange and strawberry.

Recipe will make 12 popsicles.

Ingredients:

  • 1 cup heavy cream
  • 2 teaspoons cornstarch
  • 2 tablespoons corn syrup
  • 1/2 cup sugar
  • 2 teaspoon lemon juice
  • 1 cup fresh orange juice
  • 1 cup strawberry puree

I am using 3oz of plastic cups and Popsicle sticks.

Method

  1. Mix cornstarch with 2 tablespoons of water.
  2. Boil heavy cream, cornstarch mix, corn syrup, and sugar over medium-high heat. Stir often otherwise cornstarch will become lumpy.
  3. After the cream mix starts to a boil, turn off the heat and let the cream syrup cool for at least 10 minutes.
  4. Add lemon juice and mix.
  5. Divide the cream syrup in 2 equal parts, and then pour half into the orange juice and the other half gets added to strawberry puree.
  6. Mix the fruit and cream syrup well and pour them into the 3 oz plastic cups or you can use Popsicle molds.
  7. Freeze for a few hours. When it’s a half frozen add Popsicle sticks

Variations

  1. If you prefer your Popsicles to have a smoother texture, simply strain the strawberry puree.
  2. You may also use your choice of fruits.

  1. Isn’t this recipe more quicker and convienient:

    Mix water with ordinary fruit squash and put in the freezer, Then take out and it is a popsicle.

    I bought heavy whip cream. I am not sure is it the same that you are talking about?
    Also, if I don’t use corn syrup, what will happen?

  4. I have read in many websites that high fructose corn syrup (hfcs) is not good for health. I believe corn syrup is similar to hfcs. Please advice on the same.

  5. Aditi – both ingredients are different things. Corn starch is a thickener and corn syrup is a sweetener. It csn be found in all American grocery stores and is readily available. It should be in the syrups section or in cooking / baking sections. If you leave the syrup out, it will be less sweet and not a’s smooth. If you try to substitute it with regular sugar, that will make it grainy.

    I loved the recipe. Where can I get the corn syrup from ? Will I be able to make them properly if I just use corn starch and don’t use syrup.
