PEDA (Indian Sweet)
January 24th, 2009 filed under DessertsPedas are an all time favorite sweet. Pedas are like soft milk fudge. Pedas are grainy texture made with milk and sugar, flavored with cardamom. Peda can be served as a candy or as a dessert.
Recipe makes 24.
- 3/4 cup paneer
- 3/4 cup milk powder
- 3/4 cup milk
- 1/2 cup sugar
- 3 tablespoon unsalted butter (ghee)
- 1/4 teaspoon cardamom powder (ilatchi)
For Garnish:
- 1 tablespoon sliced pistachios
Method:
- Check the recipe for paneer and make the paneer with whole milk. For this recipe use 4 cups of milk.
- Heat the frying pan on medium. Add butter and let it melt.
- Next add milk, milk powder, and paneer. Mix it well.
- Cook mixture on medium heat stirring continuously until mixture starts leaving the sides of the frying pan and becomes like dough. This should take about 12 minutes. Now this is known as khoya.
- Transfer the khoya into a bowl and let it cool off until khoya becomes just lukewarm.
- Mix the sugar and cardamom powder into the khoya and knead it for about a minute until every thing blends together and become soft dough. Note: if you mix the sugar while khoya is hot that will make pedas soft.
- Divide the mix into about 20 equal parts and roll them into round balls. Lightly press it down so it looks like small patty.
- Put few pieces of sliced pistachios on every peda.
- Pedas should be served at room temperature.
- Pedas can be kept for few days at room temperature and about a month refrigerated.

I am very glad that I came across through your website. I tried making the besan ke laddoo….it came out fabulously delicious. The only problem was it was too less in quantity
Aunty I want to try out this Peda recipe…the problem is that Milk powder is not available in this place.They sell Milk creamer instead of milk powder.The ingredients in it are semi-skimmed milk and sugar. Can i use the same quantity of that or should here be variations in its measurement?
Please do tell me cause I am very eager to make this recipe for my mom as a surprise on her birthday.

I tried the peda recipe and it came it quite good.
I have few questions though. Does the recipe call for ( as in video ) 1/3 cup milk powder, 1/3 cup paneer and 1/3 cup milk or 3/4 cup each as given in the text recipe.
the pedas i made were a little sticky, not smooth like the ones in the video.
And also can we use ghee instead of butter?

using the paneer from the store will make awful pedda’s as it is meant for curries like palak paneer mutter paneer etc and try using vinegar when u curdle the milk instead of lemon juice mix a table spoon of plain vinegar with 2 tablespoons of water and add slowly when milk is boiling and let it boil for 30 seconds or until it curdles as sen in Manjula’s video

i used the exact measuresments and procedures,but my pedas we extremely soft, i was tired of putting in more powdered milk. please check your measurements before releasing on the net.
Dont blame Majula as the measurments are perfect your peda’s were soft as you took off the pot from the stove too soon let it sit and keep mixing making sure they dont stick at the bottom (use non stick pot) until it is firm as S E E N in Mnajula’s video I cooked and they were perfect I added a little saffron and all at home said WOW and I said WOW to Manjula
I agree…my pedas didnt turn out nice….and there is some mistake in the measurement!
if u look at the video, manjula aunty is saying different amount of milk powder and everything but if u look at the ingredients in the written recipe, they are different than the ingredients in video
so which 1 am i suppose to use…..should i go with the measurement in the video or with the measurement in the written recipe?

Mine turned out fine too. Only thing different is that I had to cook the Khoya longer than the 13 minutes in the video but we’re at altitude here (5000 feet or so) … took about 17 minutes of cooking time to get it just right.
